Food allergies

So, for the last year, at least, I have been allergic to:
1. Corn
2. Red meat
3. Dairy
4. Pork
5. Peanuts

Could you imagine? Meaning every time I ate something on that list I would have the worst stomach pain and trouble going to the bathroom. It was easier to eliminate it than going through the pain.

But what do you eat when you have to stay away from that much stuff? That means, no hamburger, hot dog, cheese, cookies, breads, peanut butter/jelly, carnitas burrito, fish tacos, glass of milk, chips and salsa, snickers, butterfinger, butter on toast, enchiladas, steak, ranch dressing....and I could go on.

Well, here's what you eat: a lot of grains ie. millet, quinoa, oats, rice. A lot of beans/legumes: mung beans, pinto, black eyed, navy, italian lentils, green lentils, yellow lentils, pink, black, etc. A lot of raw vegetables, salads, squash. Other animal protein: fish, turkey, chicken, even a corny hen! And learned how to make my own sauces. Read a lot of labels and learned how to duplicate at home using Olive oil, balsamic, soy sauce, garlic, etc.

I lost a lot of weight. 30 pounds to be exact. I got pretty good at cooking in a new way. I missed the comfort food at first. Then after a few months I started to crave my new ingredients. I felt more satisfied than I had on the old diet and had more energy. I didn't feel sluggish after I ate. And the best part, I saved so much money!! I never realized how expensive the things I was living without costed!

Not to mention, lately I've been getting compliments on looking good. People are constantly asking me what I have done differently. "More raw vegetables, and less red meat!" I say.
